Saint-Aubin 1er Cru (2007)

The Saint-Aubin 2007, from the premier cru vineyard “En Vermarin”, strongly resembles our Saint-Aubin 2005. Its crispy acidity and minerality are characteristic. In the nose we find lime and laurel, aniseed and may blossom. On the palate it shows depth with a distinguished note of green apples. It’s very well-balanced. The aftertaste is long and matches the nose and palate. Our Saint-Aubin 2007 can be kept for years to come, in which it will further develop and become fleshier.
The Saint-Aubin goes best with white fish and sea fruit (fruits de mer). Its freshness makes it a perfect match for poultry as well. Best served at 12 to 14 centigrades.
