Chassagne-Montrachet (2007)

Our Chassagne-Montrachet 2007 is pleasantly fresh with a bouquet of ripe (tropical) fruit, may blossom, spiciness, flint and fennel. The typical Montrachet tone of the lee (“lie”) is clearly present. It is sophisticated, delicate, subtle, complex and deep. The wine is still (very) young and needs time to mature, but the potential cannot be overlooked. It is extremely well-balenced. Definitely first class! Its evolution is something that every wine lover will be looking forward to experience. We are certain the tropical fruit will gradually become more apparent. This wine can be kept for another five to ten years.The Chassagne-Montrachet is from the biologically cultivated vineyard “Le Champ Derrière”.
This wine can be enjoyed on its own, without food. However some wine and food combination are staggering: prawns and other delicate sea fruit (fruits de mer), black and white truffles, dishes with white sauces and dishes with tarragon or mushrooms. We can also recommend fish curries and a traditional dish prepared by Richard Bos: black pudding with caramelized apples. We recommend decanting this wine and serving it at 12 to 14 centigrades.
